Shammi Kebab
Gastro lore has it that there was once a princely Nawab who was such a foodie that he lost all his teeth due to over indulgence. So to cater to his teeth, or lack thereof, his chefs invented a silky smooth kebab which needed no chewing at all. Presenting the Shammi kebab!
Ingredients:-
500gms of any boneless ,fat less meat.
2 tbsp of chana dal ( soaked for 1 ½ hour before use )
2 tsp Cinnamon powder
3 onion finely chopped
4 tsp garlic paste.
6/8 green chillies, finely chopped.
4 cloves and 4 green cardamoms seeds, finely crushed
4/6 tsp finely chopped coriander leaf
1 tsp sugar
One egg
Salt to taste
Preparation :- Cut meat into small pieces and boil with minimum water. You can add a few pieces of onion and ginger while boiling the meat.
Drain out water and make mincemeat. It should be like dry dough. Mix with it chana (split gram) and all of the other ingredients. Add the egg at the end. Make sure that the mix is not too soft. Make balls of the dough of 2" diameter and flatten it with your palm. Heat 2 tbsp of butter in a non-stick fry pan and fry the meat patties on low heat. While frying add few drops of oil from time to time. When the patties are golden brown take them out of the pan and drain excess oil on paper napkins.
Garnish with chopped coriander leaf & grated carrots. A good dip to accompany this kebab is coconut chutney. Serve to your guests at parties and watch them smacking their lips with relish. Do advise them to chew, notwithstanding the Nawab's preferences!
