Chak's Moglai Paratha  


The monsoon season is around the corner in India. Wet and humid days, muddy feet and stinky shoes as as certain as the mildew creeping slowly up the rain drenched walls. Coming home from a necessary outdoor chore, wet and miserable, a nice hot shower and crisp clean clothes to be followed with an excellent hot, spicy dish would be as welcome as .....I leave that to your naughty imagination! 

Ingredients :-
250 gms Wheat flour
2 Onions, finely chopped
6 cloves Garlic, finely chopped
3 Eggs.
3-4 green Chillies, chopped
Pinch of Bicarbonate of Soda
Salt to taste
Veg oil for frying.

Preparation :- Make dough with flour adding a pinch of Soda Bircarbonate and 1 tsp of veg oil. Keep for half an hour. Make 6 balls and roll into Roti. Beat the eggs well and add chopped onion, garlic, green chilly & salt to taste, mix well. Heat a flat pan and place one Roti. Turn the roti couple of times and pour 1 tsp veg oil so that it gets underneath the Roti. Add good quantity of egg mix on top of the Roti and cover for half a minute. Control the heat so that Roti does not get burnt. Remove cover , fold in the Roti from four side so that it becomes square. Turn once or twice adding a little oil, take out and serve hot with Garlic Chutney.
