Oil free Potato Bonda

Friends coming over in the evening and some of them are very diet conscious and particular about avoiding oil? Boring right? Not at all! Have an enjoyable evening with awesome Oil Free potato Bondas and rest who are not particular about their fat intake would never know the difference!

Ingredients
5 large size boiled Potatoes
200 gms boiled green peas
100 gms each of finely chopped boiled carrot, beet root, French beans, cauliflower
Liberal quantity of finely chopped coriander leaf
Finely chopped green chilly as per liking
2 TBSP finely chopped parsley.
1cup finely crushed groundnut (peanuts)
1 TSP black pepper powder 
Salt to taste.

Preparation

Mash the potatoes and peas and mix them well. Add in the boiled beetroot, carrot, beans and cauliflower. Mix everything well then add in the green chillies, corriander leaves and parsley. Add black pepper and salt to taste. Make round balls (approximately 2 inch diameter) of the resulting dough, flatten them slightly between your palms and and roll them over the crushed groundnut. Heat a  non-stick pan and gently drop in the Bonda patty. Reduce heat and roast the Bonda till one side is golden brown. Then gently turn it over and roast the other side. Sprinkle grated cheese over each cutlet and serve with sauce of your liking. Goes best with tamarind chutney but if you are feeling lazy, spicy tomato sauce will do as well.
