Chicken Gumbo
The official state dish of Louisiana, USA, Gumbo is a Creole concoction of lots of meat and the holy trinity of celery, bell peppers and Onions. This variation is an invention of mine with ingredients easily available in India. A filling and nutritious dish, Chicken Gumbo can be a whole meal in itself. I would describe it as 'soul' food!
Ingredients.
8 chicken drum sticks
1 chopped capsicum
8 pods of garlic, diced
2 ½ cup chicken or veg stock.
12 button mushroom.
1 cup sliced green onion.
4 tbsp veg oil
4 chopped onion.
1/2 cup chopped celery.
salt and black paper to taste.
4 tbsp of flour.
2tbsp chopped parsley.
Preparation. Heat oil in a pan on medium fire .add the flour and stir continuously till the flour become golden. Take care not to scorch the flour. Add onions, celery, capsicum, and garlic,cook for 5 minutes. Add chicken and mix with the vegetables in the pan. Sauté for 15 minutes on low fire. Add stock,stir continuously and bring to the boil. When the meat is cooked add mushroom and green onion and parsley, simmer for few minutes. Add salt and pepper to taste.
A bowl of Gumbo by itself is great. It can also be had with slices of toasted garlic bread or even hot white rice.
