Chak's Palak Chicken


Every time a vegetarian gets invited for dinner, the poor hostess has to work extra hard to find something for the vegetarian to eat, usually something with Paneer. But, the non-vegetarians end up liking the Palak Paneer dish so much, that the poor vegetarian ends up going home with hunger pangs still gnawing at his innards. So to make things equal, here's the same Palak dish but with chicken instead of paneer. Hopefully, irrespective of gastronomic tastes, all guests can get their fill and leave the vegetarian to enjoy his Palak Paneer to his heart's content.
   
Ingredients:-
500 gms chicken breast (for 2 persons)
500 gms Spinach (palang Sag)
2 tsp grated ginger
2/3 red chillies
½ cup cream, whipped till smooth
2 green chillies
1/2 tsp sugar
Salt to taste.
50 gms butter or Ghee.

Preparation:- Boil the chicken well and shred the cooked pieces. Keep aside. Retain the stock. Boil 1 cup of water with a little salt. When the water is boiling, add the spinach and continue boiling for 2 minutes. When boiled,the spinach should be green in color. Drain out the water, and zap it in a mixie till a smooth green paste is obtained. You can add a little of the spinach water if the paste is too thick. The final consistency should be like a thick custard.
Heat butter in a non-stick pan and fry the red chillies till they are blackish. Add ginger and fry for ½ minute. Add the shredded chicken and stir fry for 1 minute. Add the spinach paste and stir well to mix with the chicken. Now add the green chillies.  Add little of the chicken stock to make the dish look soft and juicy. Add the cream in swirls on top of the cooked dish. Serve with Roti or Naan.

Psst...Palak chicken is as good for health and the old red blood cells as Palak Paneer. So you carnivores, leave the paneer alone!
