Chak's Chicken Aloo Tikka Kabab
It's a weekday but its a day for an 'at home' event for senior office colleagues. They'll be coming straight to your house after work and are sure to be hungry. But fine Scotch whisky is also on the cards and we don't want any 'mishaps' with booze on an empty stomach.
No problem.Here's something which will line the old stomach wall like a cast iron skillet and the fine old whisky can flow merrily!
Ingredients :-
250 gms minced boneless chicken.
2 finely chopped onions
2 tsp garlic paste
2 tsp ginger paste
1 tsp each of coriander, cumin, red chilly powder.
5 fully boiled Potatoes, mashed
½ cup finely chopped spring onion leaves
4 green chillies, finely chopped
1 cup wheat flour.
2 eggs.
2 tbsp Butter
Preparation :- Heat oil in a pan and stir fry chopped onion. Add minced chicken, garlic and ginger paste and stir well. Add all the powder spices and stir fry for 3- 4 minutes. Take the cooked chicken out and keep aside to cool. This is the kebab stuffing.
In a separate dish mix chopped spring onions and chillies with the mashed potatoes. Make at least 8 round balls out of the mashed potatoes. Flatten the balls and make a deep depression in the middle to put the cooked stuffing. Cover the stuffing with potato and keep the prepared Kababs in the refrigerator for ½ hour.
Beat the eggs in a bowl and take the flour on a separate plate. Dip each Kabab in the beaten eggs, roll it on flour before frying them till light brown. Garnish the fried Kababs with coriander leaves, slices of Cucumber and green chilies.
