Fish in Ginger Sauce.
Non- Vegetarian Recipe Part 2
Ingredients:-
1 ½ lbs Pomfret ,cleaned with head & tail on or large size Prawn de-shelled & divined with head & tail on.
2 tbsp Corn Flour.
4 tsp Ginger paste.
6tbsp Veg oil
4 tsp Sugar.
3tbsp Dry Sherry. *Salt to taste.
Preparation:- Dry the fish to be used well. Dust them with corn flour and keep. Heat 4 tbsp oil in a skillet and 2 tsp of sugar in the oil. When the sugar turns deep brown , place the fishes one at a time and stir. Brown the fish on both side and take out.
Make a sauce by heating balance oil in a separate pan, add to it 2 tsp sugar , when sugar becomes golden brown add ginger paste and stir. After ½ a minute add sherry, salt to taste and 4 tbsp of hot water. This will turn in to a nice golden color sauce.
Remove the cooked fish in the serving plate pour the sauce over the fish, garnish with green onion and sliced tomato and serve.
Mash potato and assorted boiled vegetable goes well with the dish.
