Chicken Bharta
This dish is usually a staple of the Indian restaurants all over the world and deservedly so. With it’s creamy texture and delicate flavours, patrons lick their platters clean!

Ingredients
500 gms chicken breast
½ cup lime juice
4-5 Onions, chopped, 4-5 whole small onions
1” piece of ginger, shredded or sliced
1 cup curd. whisked
Few cloves of garlic
1 ½ tsp Turmeric powder
1 ½ tsp red chilly powder
2 tsp garam masala powder ( powder of green cardamom, cinnamon, and cloves)
4 tbsp Cashewnut paste.
4 tbsp vegetable oil for cooking
Finely chopped coriander leaves
Salt to taste.
Preparation
Boil the chicken breasts with the ginger and whole small onions. Take the bones out and make strips of the boiled white meat. Keep the stock for use.
Make a paste of onions along with garlic, turmeric and chilly powder. Heat oil and fry the paste in vegetable oil till reddish brown. Now add the whisked curd. Put all the shredded chicken in the cooking pot and cover and cook for 10 minutes. Add ½ cup of chicken stock if the mixture becomes dry. Now add the cashew paste and stir well. Add lime juice and salt and cook for 5-7 minutes. When the gravy is thick and well mixed with chicken, sprinkle garam masala on top of the cooked dish and serve garnished with coriander leaves.
Goes well with Pilao Rice or buttered Naan.
