Pepper Chicken
Sometimes you need a change from the same old chicken dishes. Here's something that goes down grateful after an evening of drinks with friends.
Ingredients:-
4 chicken drum sticks and 4 chicken breast, cut lengthwise into two each
2 tbsp of whole black peppercorns
½ cup fresh lime juice
½ cup ginger juice
6 tbsp onion paste
2 tsp garlic paste
100 gms butter
2 tsp sugar
2 bay leaves and 2 dry red chillies
Salt to taste
Preparation : Marinate the chicken with all the above (except butter) and keep covered for 2 hrs. Make fine cuts on the drumstick and the breast while marinating to allow the juices to penetrate the meat and add flavour. Heat butter and add sugar to it. When sugar start caramelising, add the chicken pieces along with the marinade. Chicken will turn golden brown. Stir frequently till all water has evaporated. Continue frying for 1 minute, then add 1 ½ cup water. Cook on low flame till no water left. Make sure to stir while cooking. Do not cover.
Garnish with chopped parsley and chopped green onion leaves.
Serve with Paratha and Mint paste made with vinegar and green chillies (guaranteed to kill that hangover!)
